The most wonderful Irish redhead. The way she gently dances on the taste buds will seduce everyone. Treat her cold and that’s how she’ll trat you – only revealing her sweet nature when you warm up to her. The Guinness world record holder of ale yeasts.


We recommend this yeast for Guinness type ales but works very well with red ales, too. Fermenting at a low temperature will yield in a dry beer with low ester content. Fermenting at higher temperatures (>18°C) will result in a fruity, complex flavour with higher ester content.
